Paprikant is a quiet partnership with Fajszi Paprika Manufaktúra — a family house rooted in the town of Fajsz, on the banks of the Danube River in Hungary's Kalocsa region. For nearly a century, they have cultivated one of the most storied paprika soils in the world.

Our seeds are sown each spring in the river-silt soils of Fajsz. We irrigate exclusively with the nutrient-rich waters of the Danube — giving our peppers a mineral depth and a sweetness that no greenhouse can replicate. Every step of cultivation and harvest is carried out by hand.

— The Process
We process only the first harvest of each season. After picking, the peppers undergo a 6-week post-ripening period in the open sun — developing their most vivid color and deepest flavor. Damaged pieces and stems are removed by hand, and the peppers are milled fresh and sealed immediately in airtight glass.

Where others reach for acacia or beech, Fajszi's smokehouse burns hawthorn wood — an unconventional choice that yields a flavor unlike any other smoked paprika: non-bitter, fruity, and layered. It is this single detail that sets their smoked varieties apart on the world stage.

More than 150 restaurants cook with Fajszi Paprika — from checkered-tablecloth local tables to 5-star hotels and Michelin-starred kitchens. In 2022, Wolfgang Puck and chef István Szántó cooked Hungarian dishes with this paprika at the Hollywood Oscars. The Michelin Guide has recognised the crucial role this paprika plays in Hungarian cuisine.
